Cheese Scones

2 cups flour
1/3 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
4 teaspoons cream of tarter
1 or 2 teaspoon cayenne powder
1/2 teaspoon dry mustard
5 oz. cheddar, swiss, or smoky gouda cheese
Mix well, and cut in 3/4 cup cold butter.
Stir in 3/4-1 cup cream. DO NOT OVER MIX.
Roll into large ball and place on buttered cookie sheet. Flatten with hands or floured rolling pin about 1/2 inch thick.
Using a sharp knife, or BEST, a pizza cutter, cut the round dough into 6 or 8 pieces.
''Paint'' top with a beaten egg.
Sprinkle with grated cheese.
Bake 15 minutes at 400 degrees.
