Gingerly Garden Burgers

Invented this quite by accident, going through the freezer and pantry.... YUM! Serves 2-3.

5 Garden Burgers
2-3 ears of corn
1/3 cup chopped green chile
1/2 cup Gingerly Vinaigrette (Annie's Naturals, low fat)
Pistachio Kernels, roasted (optional)

In large frying pan, pour 2 T. olive oil, and gently brown the garden burgers.

With sharp knife, remove corn kernals from husk, and pour over burgers.

Cover with green chile.

Pour vinaigrette over entire dish, cover with lid, and cook until bubbly.

Serve with mashed potatoes or rice (white, brown or wild!) and Organic Salad Greens.

As an added treat, before serving sprinkle with pistachio kernels.

OPTIONAL SUBSTITUTION.... fresh peas, beans, broccoli, or any favorite vegetable for the corn.
