Green Chile Corn Bread

1 cup melted butter (or your favorite veggie oil)
1 cup sugar
8 eggs
1 15 oz. can corn
1/4 cup chopped green chile
1/4 cup cheddar cheese, grated
3/4 cup smoky Gouda cheese, grated
1/2 cup cottage cheese
1 cup white or wheat flour
1 1/4 cup yellow corn meal
4 teaspoons baking powder
1/4 teaspoon salt

Mix all ingredients until creamy

Pour batter into greased 8'' x 8'' pan.

Bake one hour at 300 degrees, or till tests done.

FOR GLUTEN FREE CORN BREAD, use ALL Cornmeal and no flour, or substitute Pamela's Baking Mix for the flour.

Pamela's is gluten-free and can be found at most health food stores.
