Oatmeal Ginger Cookies

Oatmeal Ginger Cookies

These cookies are so light & crunchy, & not too sweet. Our neighbor Sandy brought some over, & they have been a MOST FAVORITE ever since!!!

As always, use as many organic ingredients as possible.

3 cups rolled oats
1 cup flour (for gluten-free, use Pamela's or Trader Joe's Gluten-Free Baking Mix)
1/2 cup white sugar
1/2 cup brown sugar
1/3 cup sunflower seeds
1/4 cup sesame seeds
1/3 cup raisins, craisins, or currents, OPTIONAL
1 t. baking soda
1 t. salt
1 t. ground allspice
1 t. cinnamon
1 t. vanilla
1-2 T. grated fresh ginger
OPTIONAL- 1 t. grated lemon or orange peel
(FREEZE fresh ginger-makes grating SO EASY)
3/4 cup veggie oil
2 eggs

Mix well & drop onto cookie sheet by large teaspoons

350 - 375 degrees, for 12 to 15 min, or till done ((*:*))

Hi Annie!

I love this recipe. Ginger is so soothing to my stomach during my cancer treatment. So now I have a treat with stomach comfort. Thank you for your work to share with us.
