Spicy Yogurt Ginger Chicken

4 cloves garlic, finely chopped

2 c. organic, non-fat plain yogurt

4-8 T. grated fresh ginger

3 T. olive oil

1 1/2 - 2 t. cayenne pepper

1 t. black pepper

1 c. chopped mushrooms, optional

1 lb. chicken 'tenders'

Heat olive oil and brown the garlic. Cool slightly. Combine with the rest of the ingredients. Add the chicken and cook on low till done, about 20 min.

Be careful not to boil, but if you do, don't worry, it still is excellent.

Serve over brown rice pasta, wild rice, or biscuits.

Especially good the next day or two!

If you prefer, you can use chicken thighs.
